Vanilla Protein Waffles Recipe

You know how they always say "moms know best"? That's true, but what about dads?

Years ago my dad taught me the secret to fluffy waffles, and I've made them using his method ever since. The key is using WHIPPED egg whites, and folding them into the batter. The batter absorbs the egg whites and moistens up and it makes for light and fluffy vanilla pillows of joy :)

INGREDIENTS:

-1/4 cup Kodiak Cakes mix

-2 tablespoons Bobs Red Mill Coconut Flour

-1 serving vanilla protein of choice (I used a sample pack of Sunwarrior Plus)

-3 egg whites, WHIPPED with a mixer until there's no liquid/solid and fluffy

-1/2 cup Cashew Milk

METHOD:

1. Mix Kodiak Cakes, coconut flour, and protein together

2. Mix cashew milk into dry mixture

3. Whip egg whites using a mixer

4. FOLD (not stir!) the egg whites into the batter using a spatula

Guys, that's literally it. Grease your waffle iron, spoon your peanut butter, and slice up your banana, because that's all that's left to do!
